FINCA PARERA - VIMUT
Vineyard: Located in Sant Llorenç d’Hortons, in the Alt Penedès region, nestled in the Montserrat mountain range, with clay-limestone soil, an average altitude of 350 meters above sea level, and a Mediterranean climate. They naturally infuse herbs with wine in cement tanks for about six months. They add around 5% wildflower honey from their own beehives to balance the herbs and high volatile acidity. Simultaneously, they fortify the wine with alcohol to prevent natural refermentations. This alcohol is derived from distilling the Xarel·lo brisa from 2018.
