Anima Mundi

Catalunya, Spain

Agustí Torelló Roca's vision comes to life in Anima Mundi, a project he founded in 2015. Guided by the principle of revealing grape and place essence through keen land observation, Anima Mundi stands as a testament to Agustí's dedication outside Spain's appellation system. While also heading winemaking at AT Roca, known for its terroir-driven champagne-method sparkling wines in Classic Penedès, Agustí's heart lies in Anima Mundi. Nestled near the 11th century Sant Sebastià dels Gorgs monastery, Anima Mundi epitomizes Agustí's personal winemaking journey amidst the family's vineyards.

Cyclic Beer Farm

Catalunya, Spain

Established in Barcelona in 2016, Cyclic Beer Farm is dedicated to crafting a diverse range of beverages, including beers and beer fruit fermentations. Their primary focus centers on producing mixed fermentation wild ales, drawing inspiration from Belgium's traditional brewing techniques. They employ a proprietary blend of yeast and bacteria, supplemented by experimental yeast sourced from the local flora. Emphasizing seasonality and locality, they incorporate seasonal fruits and vegetables, sourcing organic produce and herbs from their family farm near Barcelona.

Bizio

Basque Country, Spain

A Basque Country cider collaboration between 3 friends, crafts ciders renowned for their vibrant acidity, sourced solely from 100% fruit without additives—no yeast, sulfites, or sugars. Unfiltered and spontaneously fermented with native yeasts, their process diverges from industrial norms. Embracing the "petiant-natural" or ancestral method, they create naturally sparkling ciders. With a focus on minimal intervention, they celebrate the Basque Country's local apple, pear, and fruit varieties. This endeavor is a collaboration among friends, embodying their passion for traditional methods and local produce.

Finca Parera

Catalunya, Spain

This multi-generational collaboration of agricultural engineers, winemakers, and farmers epitomizes biodynamic, natural winemaking. Situated in Sant Llorenç d'Hortons within Penedés Montserratí, a historic hub for quality Xarel·lo, they cultivate various fruits, cereals, olive trees, and vineyards using biodynamic methods, alongside beekeeping. Holding DEMETER and CCPAE certifications, Rubèn Parera boasts over two decades of biodynamic experience, partnering with Jordi Parera, with over 45 years in the field. They utilise concrete tanks, clay jugs and stainless steel tubs at a site steeped in history as Penedès' inaugural cooperative winery, dating back to 1520.

Casa Balaguer

Valencian Community, Spain

Casa Balaguer, nestled inland from Alicante, sources fruit from diverse plots, each offering unique terroirs. One is nestled in the Sierra Salinas foothills, benefiting from a microclimate ideal for Monastrell. Another lies in Valle de Villena a Cañada, shielded by mountains and exposed to sea breezes. They also collaborate with Moscatel vineyards near the sea in Lagunas de La Mata Natural Park. Their philosophy centers on crafting high-quality wines with minimal intervention. Employing steel, wood, concrete, and clay for fermentation and aging, they ensure each grape is hand-harvested, with no sulfur added throughout the process.

Juan Ramon Escoda

Catalunya, Spain

Joan, a pioneer in biodynamic farming, founded his winery in 1997 in Conca de Barberà, a rarely seen DO on bottles. Committed to creating natural wines, he maximizes fruit integrity. His vineyards coexist with olives, almonds, and livestock, fulfilling compost needs on-site. Encouraging biodiversity, he maintains soil moisture by leaving vegetation between rows. In the winery, native yeasts are used with no fining or filtration, and since 2007, sulphites have been omitted. His highly individual wines reflect both their origins and his innovative approach.

We work with you to review your existing wine and craft drinks programme both from a range and profitability perspective.

TASTING

We host an exclusive team tasting either at our shop or your venue, to present a range of options that we believe will suit your list.

3.

PROPOSAL

Based on the audit and feedback from the tasting, we submit a proposed list featuring bottles from our portfolio and select partners.

4.

COSTINGS

We work with you to fully cost your list, paying particular attention to the by-the-glass offer and key bottles that reinforce your concept.

5.

TRAINING

Ahead of your list going live, we host a training session with your team, on the fundamentals of wine and the specifics of your list.

6.

UPDATES

We set and implement a list review schedule, ensuring your list remains up-to-date, and includes the latest bottles added to our portfolio.



A FAMILY-OWNED, INDEPENDENT ISLAND BUSINESS

FAQ’s

  • In a word, yes. However we focus exclusively on wines that are free from the hallmarks of bad winemaking that have, in some way, given the category a bad name.

    All our wines and other beverages are made with love, care and attention, but with the least intervention possible. This means they’re better for the planet, and for your customers: free from the wizadry and chemicals that proliferate in mass-produced wines.

  • Yes. We require a 12-month contract, 50% of your by-the-glass programme, and 50% of the overall list in order to be able to offer you our consultancy service for free.

    We are also very happy to quote for wine list curation an training to anyone who buys our wine, regardless of volumes.

  • Yes, we deliver at least once a week to all locations across Mallorca.

    Depending on where you are, we may deliver two to three times per week.

  • Of course! Just reach out, and we’ll send over our portfolio for you to choose the wines you want. And we're always very happy to organise a tasting.

  • Just contact us at hola@cavvins.com and we can discuss your requirements and availability for a tasting.

    We can then set this up either at CAV or onsite at your venue.

  • Our minimum order value for free delivery is €150 euros. But we deliver any order size below that with for a €20 flat fee.

  • Yes. We require pre-payment on your first two orders, and then move onto payment terms from the third order.
